What’s Bachiche Cuisine?
We are the first Bachiche Cuisine restaurant in the United States - The term “Bachiche” emerged in the mid-19th century, when Italian families settled along Peru’s coast. The nickname, derived from the common Genoese name “Baciccia” — a dialectical form of Battista or Bautista — was affectionately given to these new settlers. Over time, as their culinary heritage merged effortlessly with Peru’s native ingredients — ají peppers, potatoes, corn, and seafood — creating a new identity that was neither purely Italian nor purely Peruvian, but entirely its own, ‘Bachiche Cuisine’. — where flavors, techniques, and histories unite. From this meeting of worlds arose a culinary expression of elegance and depth, defined by balance, creativity, and a spirit entirely its own — Bachiche Cuisine.
